February 2008 I rented an apartment in Florence, Italy. I spent 1 week cooking with Chef and guide Judy Witts. She introduced me to the ingredients, chefs and shop owners of Florence. I then spent another two weeks observing Chef Romeo at Trattoria Mario cook his classic family dishes. During the month I shopped for food and wine, walked the city and cooked dinner almost every night. What an amazing experience and I suggest you do something like this at least once in your life.
